SDK v7.3.0.5 uses Kernel 5.4, NOT Kernel 5.10, see https://software-dl.ti.com/processor-sdk-linux/esd/AM437X/07_03_00_005/exports/docs/devices/AM437X/linux/Release_Specific_Release_Notes.html
Kernel 5.10 is used as part of SDK v8.2.0.4, which as of today is the current/latest version that officially supports AM437x, see https://software-dl.ti.com/processor-sdk-linux/esd/AM437X/08_02_00_24/exports/docs/devices/AM437X/linux/Release_Specific_Release_Notes.html
We'll migrate and re-release AM437x support with SDK v9.x here in 3Q2023 which will be based on Kernel 6.1.
Depending on what you need to do you can probably also consider using the latest upstream Kernel as well. Support for AM437x should be very mature, this platform has been around for a while.
