The AM5718 data manual chapter 7.24.2 MMC2 - eMMC does confirm support for HS200.
Pls see AM572x EVM and the user_guide mentions that the EVM has the Kingston 4GB eMMC Flash Memory (EMMC04G-S100-B08U), which does support HS200.

It is said something should be 1.8V in HS200, but this schematic is 3.3V.

Which dts file belongs to AM572x EVM ? In am57xx-beagle-x15-revc.dts, or dra72-evm-revc.dts

For the eMMC in AM572x EVM, although it is capable of operating in HS200 mode, the board itself was likely not designed to make use of this feature as shown by the schematic you are providing.
With regards to your query on the DTS file, you can find this information on the board config file provided here:

I don't believe we have a reference design for this specifically. You can look at our EVMs as a reference but my guess is that this was never a requirement so this HS200 feature was never validated.

Where did you find that the lines should be 1.8V instead of 3.3V? I believe HS200 mode should be available to use in TI's EVM as stated in the datasheet.
