For a school project I'm trying to design a Active Noise Control using the DSK C6713. I need an input sample and a feedback error signal but it is not clear to me if I can use the "mic in" and the "line in" at the same time.

As an excellent learning experience, look at the schematic for the board to see how the two ports are connected from the ADCs to the DSP. Also, read the TechRef for the board to see how they might be accessed. And finally, look at the Board Support Library example files and documentation to see what the commands are that are used to access these two ADCs.
Without reading those for you, I do not remember how they are connected. But I would give you a 90% chance that you can use both at the same time. You will have to account for the different filtering provided on both, which you can see in the schematic.
