I’ve read that the AM3505 DSS supports HD, but the datasheet is not clear about whether that is 720p or 1080p. There are a lot of TBD’s in that section.
Is there any difference between the AM3505 and AM3517 in this area ?
Are there any Preliminary App Notes / User Guide specifically on the Display Sub System ?

Primarily I would expect this to be 720p@60fps, 1080p is possible however not at the standard 60fps frame rate, you are limited by the maximum pixel clock on the display interface, so it is not what you would typically call a 1080p device. I would expect the TBDs to be filled in within the coming months for official numbers, but for a good idea of what it will likely be like you may want to look at the OMAP3530 specifications as it has a similar display interface.

The display capabilities should be the same, they share the same display hardware, the main difference between the two is that the AM3517 has the SGX 3D accelerator and the AM3505 does not.

Chapter 12 in the AM35x TRM discusses the display sub system, there do not appear to be any other application notes or user's guides at this time.
