In CCS I see these device names, but what c6000 chips are they referreing to?

Sub-arctic refers to AM335x Arctic may be an automotive part so you may need to check on those forums
Kepler refers to TCI663xK2K devices
Vayu refers to AM5728/26 or OMAP5 family of devices.
Can you please specify what version of CCS you are using and under what configurations you see these options.

I'm using CCS 5.4 and CCS 5.5 and I'm using xdctools 3.25.5.94. I see these names when I am creating a new custom RTSC Platform. Tools -> RTSC Tools -> Platform -> New
Device Family = c6000
Device Name = [Arctic | Kepler | Vayu | ...]
