about the am3358's interconnect

You don't need to choose anything. One or the other interconnect port will be used based on the necessary connection .

    as the chapter10.1.2.3,when Cortex-A8 access the GPMC address space MPUSS-M1 will cannot access the target(GPMC) but the MPUSS-M2 will can.when this situation how the Cortex-A8 decide which interconnect port will be used?

This is automatically chosen depending on the required target.

Purely based on target address: the upper half of address space (0x80000000 - 0xFFFFFFFF) is sent to the 128-bit master port, while the lower half (0x00000000 - 0x7FFFFFFF) is sent to the 64-bit master port, except for five sections reserved for local destinations within MPUSS itself:

0x00000000 - 0x000FFFFF boot space (redirected to local ROM¹)
0x40000000 - 0x400FFFFF local ROM
0x40100000 - 0x401FFFFF reserved²
0x40200000 - 0x402FFFFF local RAM
0x48200000 - 0x482FFFFF local peripherals (interrupt controller and SSM)

¹Apparently boot space can in theory be redirected elsewhere, although this functionality is not available on the am335x nor on any other device containing this MPUSS ("Sabertooth") or its predecessor ("Modena") as far as I know.

²This range is apparently routed to a third master port (32-bit, low performance), which is however not connected to anything on the am335x nor on any other device containing Sabertooth/Modena as far as I know.
