Please recommend DSP for IF signal processing...

I think, C6713 DSP would be the best to implement AM modulator. There is a DSK6713 evaluation kit is available to do real time signal processing and also, c6748 would also be suitable.

You can also refer the rulph chassaing dsp books and get the AM coding as well, you could refer the wiki books below:
