RTOS/TMS320C6655: Is it hard to interface the C66x/C67x uPP with a parallel camera?

The uPP interface is designed for connection between the dsp & ADC or FPGA. I haven't seen it interfaced with a camera.
While depending on the camera interface it might be possible to use the UPP for such connection, but in my opinion this is a quite difficult task. You should also take into account the sw side. There is no reference driver for the uPP interface (except some older sysbios examples) especially for connection with a camera.

So to answer the original question, yes, in my opinion this is a difficult task.
