Are there any functions the Am3707 have that favors certain NAND models ? I couldn't help but notice the GPMC has a 10 bit bus and a 8 bit bus ?

NAND requirements are listed in section 26.4.7.4 of the AM37x TRM Rev. R. There is no list of recommended NAND memories.

Does the beagle board demo use NAND ?

No, there is no NAND memory on the BeagleBoard-xM.

NAND connections are shown on Figure 10-3 in the AM37x TRM Rev. R.
