It certainly is, however there is no evaluation hardware or reference design that I know of which has this implemented, you would need a DVI receiver hooked up to the VPFE hardware and a modified video capture driver software to manage the new DVI receiver hardware.

From a video standard perspective the VPFE could support up to 720p or 1080i, it will not support full 1080p due to the maximum pixel clock it can manage (13.33nS period, 75MHz). If you are using a non standard video format than you just have to ensure that the pixel clock it requires is less than 75MHz (i.e. you could have a very large frame at a low frame rate, or a very small frame at a high frame rate).
Maybe its not a good idea, but one option could be to scale video before input to the DSP from 1080p to 720p:
