The Cortex-A72 bundle from ARM is an ARMv8.0 CPU. It does not support ARMv8.1 extensions. An A72 profile does have some configuration options like {ECC, FEQ size, Crypto, L2 size} but none of these options are part of 8.1 extensions.

No. We would have to change the processor type to support a later architecture version.
Per ARM's website, it doesn't look like any of their standard cores are at the ARMv8.1 level. Some partners who modify the architecture like Apple used this profile. The next comparable class core which supports a higher level is the Cortex-A75 which supports ARMv8.2.
