The spec sheet for the TMP64-Q1 describes biasing the thermistor with a precision current source which could be generated by an ADC.
Would someone please recommend an ADC with a precision current source ideal for this part?
Preferable an ADC with I2C.

For what application would this be?
I would recommend either the ADS122C04 (24-bit) or ADS112C04 (16-bit). Both of these devices have 2x well-matched current sources and an I2C interface. The current output options on this device are 10, 50, 100, 250, 500, 1000, and 1500 µA.
The TMP64-Q1 would be best optimized with the 50 µA setting.
For other interfaces there are the below recommendations:
UART - ADS122U04 (24-bit) and ADS112U04 (16-bit)
SPI - ADS124S08, ADS124S06, ADS1220, ADS1260 / ADS1261, ADS1262 / ADS1263
