BQ25121: How does one determine the pullup voltage for the I2C lines?

In the specs the VIH numbers for SDA and SCL depend upon Vpullup. How does one determine Vpullup (they are internal)? For example, if the host is powered by SYS, and its default is 1.8V and the battery is at 3.0V, is there a danger that the host won't be able to program the bq25120?

Is the only difference between the 25120 and 25121 the default SYS voltage? In the above scenario, which would be better to use?
