Hello,

Please clarify the below queries -

1. Is it possible to find/estimate the overshoot, undershoot, settling time and number of ringings from the phase and gain plots?

2. How's the magnitude of RAMP voltage is decided in voltage mode control?

Yes it is possible to correlate transient response to phase/gain plots.

This attached app note describes how to estimate phase/gain from looking at output transient response.
See Figure 5.
So it is logical that you could estimate transient response based on phase/gain.

For the ramp voltage, you need as much ramp as possible while staying below the maximum allowed for the IC.
The more ramp you have, the more immune to noise, less jitter, the circuit will be.
