This is not really a technical question. I already bought a PCM2903EVM-U. But why are the PCM29xx ADCs not on the list of Audio ADCs?

Yes the PCM2903EVM-U is fine for evaluating PCM2903C. Just see the following app note for the differences between the C and non-C version of the device:

Even though the EVM is labeled as the non-C version of the part, the chip on the PCB is the PCM2903C.
