Wondering what happens if IN- or IN+ are left floating? It doesn't appear like they internally pulled up/down. What would the output go to?

Hello Joe,
Bias currents flow OUT the inputs towards V- (GND), so there is an equivalent very "soft" pull-up of a few nA. The outputs would tend to float ~800mV below V+.
So there is NO assumption that the output would be in a particular state (I assume that is your next question). So the output state would be concidered random under that condition.
