There are many different Wheatstone bridge circuits (see A Basic Guide to Bridge Measurements), and there are many different products that are suitable.

What are the required voltage/current, frequencies, and accuracy? Should the output go to an ADC or to a current loop transmitter?

Typically an amplification stage is constructed with discrete OpAmps, or with instrumentation amplifiers. Please look into this circuit example and this app note respectively for more details, along with recommended devices.
