I have found the peak solder temperature is 260C. Is this the maximum temperature the component can sustain? For how long?

The table specifies a maximum solder temperature of 260°C and a recommended dwell time of 3 seconds.
As Clemens pointed out, the solder profile is much different than the maximum operating temperature and maximum storage temperature of the device. See from the absolute maximum ratings table in the datasheet, the storage temperature should be less than 150°C, and the operating junction temperature must be less than 150°C.

Exposing the devices to high temperatures can severely accelerate the aging of the device, and reduce the device's lifespan. This effect can be exponential at extreme temperatures, which is why the storage temperature is given an absolute maximum rating at 150°C.
You are correct that the storage temperature is relaxed compared to the operating temperature, but only at the low temperature range.
