Is there a way to simulate this part in LT Spice? Looking to use it in the lab for a voltage measurement device but would like to run it in LT Spice first.

We have a PSpice model available on the product page, and you can use PSpice for TI to simulate the device. You might also be able to import that model into LT Spice.
