Could our part support +8 and -2V?

Hi Mia,
Yes, the example you shared will work. The nominal supply voltage for this device is 10V (Vs = Vs(+) - Vs(-)), therefore as long this is not violated the device can be configured asymmetrically with any combination of voltage values for Vs+ and Vs-.

Yes, you are correct, the max of 13V in the recommended operating conditions can be any combination of supplies.

Yes you are absolutely right.
For best performance the output should be centered around 3V which can be easily done by offset control DAC in cases when the supply is -2V and +8V .
