INA180-Q1: Overshoot of output waveform

I would first try to incorporate input and or output filters with f cutoff frequencies as low as system can allow for signal bandwidth.

Input filter would need common mode capacitor (Ccm) at input pins to ground and resistors <10-Ohm ideally. You would also want a differential input capacitor to keep shunt voltage stable. See this application note, specifically Figure 4-2 of following document.

If low pass filters do not mitigate the spike enough, then the other and more ideal option is to replace INA180 with INA181, which is same but has a reference pin. If you provide the reference pin with a voltage >~100mV you can remove any non linear operation of the OUT pin, which is most likely what is happening with the test. When VOUT is 0V it is saturated and will not respond linearly and this can cause excessive overshoot.
