The INA141 allows for selection between G10 or G100, not a gain of 1000 - therefore does not appear to be a good fit for this application.
We do have other instrumentation amplifiers with integrated resistors that allow for the selection of 1000, the PGA204 for example.
Alternatively, the companion model of the INA141 is the INA128 that with an external gain setting resistor can achieve gains between 1V/V to 10,000 V/V.

My recommendation is the INA851 which offers a fully differential output to feed directly to an ADC (with low noise): First High-Precision Instrumentation Amplifier With Fully- Differential Outputs
