My question is simple. What do I do if the Trimming pins 8 and 1 are not use for my application ? I could not find any information about it in the specification/data sheet.

You may leave Pins 8 and 1 Floating or Open, if you are not using them. Many of latest op amps have eliminate the Vos trim functionalities, and typically two pins are specified as NC.
