I'm looking for an amplifier who can convert a signal of 0 - 1V to 0 - 5V the signal frequency goes from 1Hz to 170kHz.
Can you advise me for some amplifier ?

The supply can go from +/-5 to +/-12V, to see better the hydrophone characteristics look for this link: http://www.teledyne-reson.com/products/hydrophones/tc-4013/. The output swing can be 0.5V.
The hydrophone output range is between 1 and -1 V but i want to move the gain to the firs axis between 0 and 5, and add some gain.

Do you need the amplifier when the hydrophone is in the receive mode, or the transmit mode? Your description tends to suggest you want to amplify the received signal. You mention an output swing of 0.5 V, a hydrophone output range from 1 to -1 V (2 Vp-p?), and something about moving the gain between 0 and 5, and then "add some gain." I am not quite sure what you are requesting.

Yes the amplifier is for receive mode and the signal is 2 Vp-p. I only want an amplifier that gives me a good response for a range of frequency from 1 to 200kHz.
When you mentioned swing i understand like the value in the output it can goes. it can be from 0.5 to 4.5 V or 0 to 5V. Is that what you mean when you want to know the swing no?
I pretend to use the amplifier to apply a gain of around 2.5 V (5 Vp-p) and move the signal to the positive axis where my -2.5V moves to 0V and 2.5V moves to 5V because my adc is 0 to 5.5V . This is only to give you an idea about what i'm trying to do with the signal.

I have put together a schematic for a prototype hydrophone amplifier based on the OPA365. It is designed to accept the -1 to +1 V input range and transform it to a 0 to +5 V output range suitable for driving your ADC. The bandwidth is from less than 1 Hz, to a few Megahertz. It has a gain of 2.5 V/V (8 dB). You can see the schematic below and in the attachment.
This could serve as a starting place.

Teledyne Reson offers external preamplifiers for their Hydrophones. The VP 2000 has higher gain settings, and has extended HI and LO pass filters allowing you to set individual band passes. The VP 1000 has less voltage gain, and only Hi-pass filters up to 50kHz. The VP 2000 tends to offer a bit more flexibility to different applications.
Max output will always be half of the supply voltage minus 1 volt up to about 200khz.
