I can think of a few different devices that would work for this application.

The OPA1632, THS4131, and the THS4521 could all work for a single ended to differential signal converter. In fact if you look in the ADS1271 (Figure 70) and the ADS1278 (Figure 90) datasheets, there is a recommended circuit.

If you want, look up the ADS1278EVM User Guide and find the schematic. It uses the OPA1632 as a front end buffer.
