So in order to prevent the output from saturating, the equation VOUT = R_SHUNT*I_LOAD*GAIN should never exceed the supply voltage, in the ideal case of course. Is that correct?

    Yes you’re correct.

    As you noted, the equation can be applied as ideal case when output is referenced to ground; if the reference is nonzero, simply add reference voltage value to the output equation.
