VCM-AC is the common-mode voltage of AC-coupled outputs. The signal will swing around this voltage, having the common-mode voltage serving as the "middle of the signal." For instance, in the bottom figure, the common-mode voltage would be V_ID/2. The VCM-DC has the same description, it just is for DC-coupled outputs. Hope this helps!
