Does the evaluation board of the ADC3424 support a clock of 80 MHz instead of 125 MHz ?

Yes, the board will function at 80 MHz. If you intent to use the device at 80 MHz permanently, there is an ADC3423 EVM (and device) that are specified for 80 MHz operation.
