ADS7884 datasheet electrical specs are defined at full throughput. I do not see any issue operating this part at lower sampling speeds. There are some datasheet graphs which extend up to few tens of ksps data rate.

Can you please let me know whar are your system requirements. What is the minimum sampling speed you are looking for
