I would say there's two different approaches to the problem. You can either stick with the lower cost and resolution, general purpose ADC; or go for something more tailored, precise, and costly. In my experience, Piezo-electric load cells are usually set up in a Wheatstone, resistive bridge sensing configuration. This is definitely possible for most ADCs to take this kind of input configuration. However, I don't know your input voltage, data rate, channel count, and voltage reference requirements which may help you decide between the two approaches.
To start with the general purpose approach, I recommend you refer to this E2E FAQ: https://e2e.ti.com/support/data-converters-group/data-converters/f/data-converters-forum/780482/faq-texas-instruments-general-purpose-adc-overview . 8 bits is a very low resolution requirement and you'll see that the listed devices might be overkill in the context of data rate but at least they are low in cost.
The more tailored devices will be the ADS123x type family as describe in this E2E post: https://e2e.ti.com/support/data-converters-group/data-converters/f/data-converters-forum/987436/recommended-adc-for-real-time-load-cell . They are the recommended devices for resistive bridge sensing and they have some special features that help with this. Note, the general trend of 4x the cost.
And yes, the ADS131M0x can be used in a load cell application but they have extra features that do not benefit you. As a result, the ADS123x is still the better pick.

Can you share the part number or datasheet for the piezo-electric load cell you are using? There might be a need for between interfacing with the ADC depending if the sensor has anything integrated inside.
