Should unused channels (input and output) be connected to GND or VCC?
Otherwise, Can I leave they OPEN?

I have an additional question.
What happens if unused input be left? the output of used channel occurs abnormal operating?
also, Can I place 10 Kohm pull-down resistor for unused input channel?
Letting an input float will increase power consumption, and might damage the device; see [FAQ] How does a slow or floating input affect a CMOS device?
The size of the input series resistor does not matter; it might as well be 0 Ω. You need 10 kΩ only if you want to change the level during debugging.
