What's the meaning for LCD display 8x51 and 4x55?
And how much pin will it use to achieve that?

It means use 8 COM port and 51 segment.
You can treat it as 8 line and 51 row. LCD is combined of 8x51 point. We use these line and row to scan these point.
For COM port, it is defined by LCD spec. Here is an example.

So I can even achieve with 29x30, 29 COM port and 30 segement.

As I said, the COM number is related to the LCD spec. Normally it is 4 com. If the com is higher, like 8, that means the display performance will be bad.
