Yes, you can configure and use it SPI to support this communication.
In fact, it doesn't require any special configuration for this requirement. You can just leave MOSI as just unconnected. If we do this then it won't affect any communication and remaining communication on MISO will go as it is.
or else you can configure MOSI line as GPIO just like as shown below.
In both the cases, at aplication level you need to configure "spiTransmitAndReceiveData" API with some dummy transmission data (0xFF or 0x00) to transmit on MOSI. This is required because after calling this api with some transmission data the clock will get generate and interchange between master and slave communication will happen.
As we are calling dummy buffer on transmission data, so MOSI will shift with these dummy bytes, however on the other hand MISO will receive valid data from slaves.
