The PxSEL0 and PxSEL1 and used to select the function that the GPIO will work as. As only two bits are available only a max of 4 choices can be used.
But as you can see in a few pins there are a more than 4 functions for a few pins. How does it work for the others functions?
As shown in section 6.11 of the datasheet, pins can have different functions in the input and output directions:
Furthermore, all the analog functions are lumped together under a single PxSEL setting because the connections to those modules are done with configuration bits in those modules.
