There are several orderable versions that end with LFT and i wanted to know what the differences are between those and the LM317LZ/NOPB material. Are they functionally the same? What are the operating temperature ranges?

Yes, the performance is the same and the Operating temperature is as specified in the datasheet.
The LM317L-N is available in a standard 3-pin TO-92 transistor package, the 8-pin SOIC package, and 6- pin DSBGA package. The LM317L-N is rated for operation over a −40°C to 125°C range.

Thank you for that information. You mentioned that this is in the datasheet but the screenshot I attached with my original question shows that the operating temperature isn't shown in the "package information" table. Where is the operating temp info in the DS?
Also what is the difference between the 7 different orderable? The document you linked to talks about the different package options but not the differences of the orderable. Since each of the LM317LN/LFTx devices come in the same package option it didn't help me narrow things down.

These are old datasheets from National Semiconductors. The chip was characterized for the temperature rating as mentioned.
The 7 orderables are different on how they are packed and shipped. No other difference.
