in the UCC28C56EVM-066 EVB I would like to replace the power MOSFET SCT1000N170AG with a SIC MOS (G3R160MT17J). The new MOSFET have the Kelvin Source pin, where and how should I connect it?
Another question: for use G3R160MT17J (G3R Technology with +15 V Gate) I must replace UCC28C56HQDRQ1, present on EVB, with UCC28C58QDRQ1?

The connection needs to be like the below.

For this MOSFET, yes, UCC28C58 should be used, and the VDD needs to change to 15V from current 18V. So the aux related circuit needs to redesign.

Can I continue to use the transformer on the EVB and only modify the other components?
Hi,
If using the same transformer, Vout would need to adjust proportionally since AUX is cross regulated with Vout to get 15V instead of 18V, assuming you have same similar voltage range.
If that is not possible, you would need to add an LDO between AUX and VDD then you can set up Vout relatively independently.
