I saw that this component is limited to 700V (HV in). Currently, we are using it for a 400V system, but if we use it in an 800V system can we place some limiting resistor in the HV input to limit the voltage to limit the voltage in the HV pin?

Thank you for reaching out.
The best way would be to use a series resistor with a Zener connected to HV pin. I am attaching the same for your reference.
