Our custom board required two LVDS Displays. The AM625 datasheet mentions LVDS -1 (8x Lane).
If possible use 2 LVDS displays using 4 lanes for display 1 and another four-lane for display 2 ???

Hello Pandian,
Yes, it's possible to connect two displays and use the LVDS in single link mode. However, due to HW limitations, both the displays will be mirrored.

Yes, both DPI and LVDS have independent PLL so it's possible to run both at 1080p60 resolutions. However, please keep in mind that we only have 16bit DDR on AM62x. The displays will run at 60FPS because of VSYNC but GPU/A53 FPS will vary based on the load.
