Is there any reason that temperature value of the default high limit resister and low limit resister set 75℃ and 80℃
In my opinion the temperature range between default TLOW and THIGH is so small.
Are there any problems if the range between them is wide?

No, I am not exactly sure why the default limit values were chosen. This may just be carried over from the long standing LM75 device which the TMP1075 is based on.
No, no problem in making the range wider. The thermostat section also mentions the maximum values for Tlow and Thigh. At the maximum limits, the alert pin is effectively disabled.

The alert pin is an open drain output. When unused, you can connect to ground or float.
