I would like to use TMP1826 as a simple identification device. I am trying to understand the connections needed for the board. I will be using the board with LAUNCHXL-F28379D.
Please find the diagrams below. Could you please confirm if the connections and resistor value is correct for this application?

If you are using an open drain GPIO on the F28379D, SDQ can be directly connected as you show with 1k pull resistor. Unused pins should be grounded as you also show.
If you are using a UART, this is a push-pull IO and you should use a buffer with open drain driver as shown in figure 8-3 of the datasheet.

Section 8.2.1.2 of the datasheet has an example to calculate the pull up range for bus powered mode. This example is for 5V, so you would need to alter this for your supply voltage.
