Hi,
I'd like to use this amplifier, but I find it strange that a SOT23-5 has a height tolerance up to 1.45mm while other SOT23 are ofter up to 1.1mm.
Is the 1.45mm a mistake or it is actually an irregular height?
If this is the actual height, do you have an identical alternative with a heights of max 1.1mm?

The height plus leads could be up to 1.45
The actual package (without leads) is 1.1, but this is a (reference value) "typical"
Do you have an example where the same spec is 1.1mm max?

I see that you are correct and what I saw was TSOT-23.
Does an equivalent to the LM7321 exist with a lower height?

For single channel op amp with [Supply 30V, Gain bandwidth 15MHz, Slew Rate 14V/us, rail to rail in and out] there is only LM7321.
To find a new device in a thinner package I will need to downgrade at least one of the parameters
What are the key parameters required in a replacement device?

The closest device I found was OPA172IDCKR. Maximum height is 1.1mm.
For dual op amp, OPA2210IDRGR, OPA1652AIDRGR, and OPA1678IDRGR are even thinner, 0.8mm maximum.
