Is there any specific figure or point directly labeled "Gain" in the OPA2387
The close-loop gain of any op amp is set by the choice of external resistors. OPA2387 is a chopper amplifier with internal auto-calibration circuitry, which is not recommended for very high source impedance of active electrodes used in EEG/ECG applications due to commutation of IB spikes into voltage noise. Thus, I would recommended package-level trimmed parts (eTrim) like OPA2392, OPA397, OPA2391, OPA2376 or TLV2376.
