Hello precision team!
Will the OPA549 work as both a positive AND negative current limiter. In other words, if the Ilim pin is set to limit the output current to 5A, will it limit at 5A whether the part is sourcing (+5A) or sinking (-5A) current?

The current limit does function in both directions (source and sinking) as you have described above. If you look at page 9 of the datasheet there is a +/- symbol in front of the current limit equation:
However, you should also note that the limits are not exactly the same for all power supply voltages as shown on page 4 of the datasheet:
