First, the maximum BCLK frequency of the PCM6xx0-Q1 family is 25MHz (40ns min period - Section 7.10 in datasheet).
Second, there are limited processing resources available in the PCM6xx0-Q1 family to perform the required decimation and filtering at higher speeds and as a result the maximum channel count while operating at 384kHz is 2. Please find more information about the supported combinations in the following application note:

If 384kHz limit the maximum number of channel to be processed to 2 channels,
Even if I limit the resolution to 16bit (384kHz x 16bit x 4 = 24.5MHz), the maximum output channel is still limited to 2 channels?

Hello,
The maximum channel count is related to internal processing requirements from the fixed resource processing engine performing the decimation, filtering, DRE/AGC, etc. Therefore, the data length and resulting max BCLK frequency is not the limiting factor.
We've been communicating offline directly and we've shown that it's actually possible (barely) to get 3 active channels using the PCM6260-Q1 or PCM6240-Q1 at 384kHz sampling rates provided soft-stepping and most other processing features are turned off while using the three channels.
