I notice that the reference voltage for the ADC is 2.5 V yet it can supply +-10V. Can you explain how this works? Is it being multiplied internally?

Hi Jewel,
The ADS8509 is actually dividing internally. The figure on the first page of the datasheet shows the values of three resistors internal to the device at the RXin pins - these are 9.8k, 4.9k and 2.5k. If you then take a look at Figure 29 and Figure 30, they show you external resistor strapping that you would need to accommodate the variety on input voltage ranges.
