It is fine to measure 1000VDC with the AMC1333M10, but depending on your creepage and clearance requirements, a digital isolator may be needed in addition.
We don't have any example C code for the AMC1333M10.

1. Can it be interfaced on SPI or uart interface with MCU?

2. Have to measure 1000Vdc & 300A via shunt resistor

a) For voltage sensing , found that https://www.ti.com/product/AMC3336 has inbuilt dc-dc also, so simplifies design, so can use it

b) for current sesing found https://www.ti.com/product/AMC3306M05 , also has inuilt dc dc

will these 2 be ok for design in 1000V/300A application?

Thank you for your patience.

No, these parts cannot be interfaced using SPI or UART to an MCU. The MCU should have a sigma-delta filter module (SDFM) to reconstruct the digital output, DOUT.
Yes, AMC3336 is fine for voltage sensing 1000VDC via resistor divider and AMC3306 is fine for current sensing 300A via shunt resistor.
