Can the power supply voltage of AM26LV32EIRGYR and AM26LV31EIRGYR be used at 5V?

5 V is inside the absolute maximum ratings, so the device will not be damaged.
5 V is outside the recommended operating conditions, so correct operation is not guaranteed.
There are 5 V devices like the AM26C31/32, but they do not have the same ESD protection.

Clemens is correct. I wouldn't advise using this device at VCC = 5V as this device is not designed for 5V operation (it is a 3.3V part - the "LV" in part number means low voltage - which 3.3V (nominal) is the lowest voltage supply you will see for RS-422).
That being said the AM26C31 and AM26C32 are the 5V quad RS-422 parts - they don't have the improved ESD ratings - but if your system already has , or plans to add, protection diodes on the bus (which is very common) a lot of the time the diodes themselves will have higher ESD protection that adds a higher ESD protection to the communication node.
