I would be grateful if you could advise.

Regarding SN74LVC8T245, the datasheet P.6 6.6 Electrical Characteristics doesn't described VOH/VOL when VCC=5.5V.

Could you please let us know ?

Reference value is fine.

The V_OL/V_OH values are specified for a 4.5 V supply because that would be the worst case of a 5 V ±10 % supply. You are supposed to use these values for a nominal 5 V supply.

The V_OH values are measured relative to V_CC, so at 5.5 V, the actual V_OH would be (at least) 1 V higher. See [FAQ] What is the output voltage (VOH or VOL) when the output current is X or the supply voltage is Y?

I confirmed FAQ you suggested and calculated.

At 5.5V, VOH is 4.8V and VOL is 0.55V.

I'll share these value with the customer.
