Open or pulldown/pullup(in external of SoC)?

If you do not have a trace connected, you could leave it open.

If you have a TP connected or the GPIO connected to a connector, an external pull is recommended. Pull depends on the future use case.

Do you recommand to set internal pull up/down? or default setting?

No issues leaving with default setting.

If customers have some specific requirement to enable the pull , they could enable the internal after power-up.
