I am using FDC2212 sensor. It has two sensor configurations. For the single-ended configuration, there are two plates, one can connect to IN0A, and the other which is the target connect to GND. Is this GND means our board's GND or what?
On the differential sensor configuration, there are two plates connecting to IN0A and IN0B. And it seems there are two capacitors. For both capacitors, one side connects to FDC, the other side connect GND. Is that so ? And does the GND also mean the board's gnd?
In my application, I use plate 1 and plate 2 as the two plates of capacitor and I don't connect to GND. Is this correct?

If you have a conductive target, you can connect it to your board's GND, though it is not necessary. For non-conductive targets, the other side of the capacitor is a virtual GND.
In general, all you need is a sensor electrode on either side of the LC tank. This is often a copper pour on a PCB. The other half of the capacitor is formed by a virtual GND and does not need a physical plate or electrode.
It sounds like your setup is correct for the differential sensor configuration.
